Blueberry Pancakes

These are so yummy and easy, perfect for when you have house guests and want to impress them with a delicious breakfast. Blueberries are great for you but I think they taste a little boring on their own. I like to add them to smoothies or top my yogurt with them and of course throw them in my pancakes. They help me feel a little better about the dousing of syrup I add. Of course if you want to avoid any health benefits this recipe works pretty darn well on it's own or with chocolate chips in place of blueberries!

  • 1 1/2 cups flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 1/2 tbsp sugar
  • 1 1/4 cup milk
  • 1 egg
  • 1 tsp vanilla
  • 3 tbsp melted margarine
  • couple handfuls of blueberries

In a large bowl whisk together the flour, baking powder, salt and sugar. Make a well in the centre of the dry ingredients. Add the milk, egg, vanilla and margarine. Whisk until smooth. Stir in the blueberries.

Spray a non stick frying pan lightly with cooking spray and heat to medium high. Add pancake batter in approx 1/2 cup dollops and allow to spread. Keep an eye on them and when they are golden brown on the bottom flip until golden again on the other side.

Top with a dollop of butter, a generous glob of syrup and a sprinkle of fresh berries. Good morning!
