Roasted Red Pepper Spread

Another 2 ingredient recipe from Gin and Soda! I love this spread so much I could eat it for dinner with a spoon. It's quick and easy and people always gobble it up at parties. I also love that it has a little colour. Sometimes party food can get a little beige. This tastes best served with cut up pita triangles but any cracker will do.

  • 1 red pepper
  • 1 brick cream cheese
  • salt and pepper

Cut the red pepper into quarters and remove the sides and white membrane inside. Flatten each section with your fist and place on a cookie sheet skin side up. Place under your broiler and keep a close eye on them. When the skin turns black (but before the whole pepper burns) remove them from the oven. Place the pieces in a ziploc bag, seal and leave on the counter to cool.

After the peppers have cooled in the bag the skin will peel right off with no trouble. PLace the peppers and the cream cheese in your food processor and pulse away until you have a lovely pink and red flecked cream cheese spread.

Don't just keep this for your guests. It's fantastic on a bagel with some other veggies for a delicious lunch!
