New Potatoes with Dill

Summer time means an oppourtunity to eat foods that aren't available all year. New potatoes make a regular appearance at our house. Cook them in their skin and then roughly mash with fresh dil and you have a delicious side to anything off the grill.

  • new potatoes, red or yellow
  • fresh dill
  • butter
  • salt and pepper

Boil potatoes in their skin. New potatoes are usually tiny enough that they don't need to be halved or quartered. Boil until they are fork tender.

Drain the water and into the pot add a generous heap of chopped dill, a dollop of butter and salt and pepper. Mash the potatoes just as they are in the skins. DO NOT mash until you have a puree like whipped potatoes. This should be rustic and a little chunky.

A great side for any summer meal.
