Strawberry Bread

Strawberry season is upon us. Everywhere I look there are strawberries, strawberries and more strawberries! They are so ridiculously cheap at the grocery store right now that recently I was tempted to buy a 2lb box. Of course there was no way Ryan and I could ever make it through that box and live to tell about it. So, this recipe was researched in order to make good use before they all went soft and moldy.

  • 4 cups strawberries
  • 3 1/4 cups flour
  • 2 cups sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 cup oil
  • 1 lge apple
  • 4 eggs

Preheat your oven to 350F. Grease 2 regular loaf pans. Slice strawberries until you have 4 cups worth. The number of berries required will vary depending on their size.

In a large bowl mix together flour, sugar, salt, baking soda and cinamon. Roughly chop up apple and add to food processor. Add oil. Pulverize until an applesauce consistency. Pour over strawberries. Add eggs and mash with a potato masher until strawberries are in smallish chunks.

Add strawberries mixture to sry mixture and doing figure 8s with your spatula mix until just combined. Do not overmix.

Bake for approx 1 hour or until a knife comes out clean.
