Poor Man's Cinnamon Buns

Ryan makes these as treats for us when we're craving something sweet. They are heaven especially warm and gooey right out of the oven. They are a simple variation on the old baking powder biscuits we all learned how to make in "Cooking for Young People" back in junior high.

  • 2 cups flour
  • 3 tsp baking powder
  • 1 tsp salt
  • 1/3 cup cold margarine
  • 3/4 cup milk
  • speadable margarine
  • brown sugar
  • cinnamon

Preheat oven to 450F. In a bowl stir together the dry ingredients. With a pastry cutter, cut in the margarine until you have a course crumble. (If you do not have a pastry cutter you can use 2 knives but I recomend a cutter - it's a cheap addition to your kitchen supplies)

Make a small well in the centre of the flour mixture and add 2/3 cup of the milk. Stir in the dry ingredients from the side forming a ball. Do not overwork the dough. If the mixture is dry add a little of the remaining milk at a time until a ball forms. Gently knead the dough on a floured surface for approx 1 minute.

Roll out the dough until it is approx 1/4 inch thick. Spead one side completely with margarine (enough to make sprinkled sugar stick). Lightly sprinkle brown sugar and cinnamon over the buttered side. This is a matter of taste. I like more sugar than cinnamon.

Starting at one edge roll up the dough to make a snake of dough. Cut the snake into pieces approx 1.5 inches thick. Place each slice swirl side up in a greased muffin tin. Bake 12-15 minutes until golden and bubbling.

Eat straight from the oven with a glass of cold milk or serve with your next brunch.
