Reuben: King of Sandwiches

Much like my need to convert the adult world to gin I also feel the need to convince everyone that the Reuben is the best sandwich ever made. Even if you think you will hate it I urge you to try a bite of a proper Reuben if you get the chance. My ex and I disagreed for TWO YEARS over Reubens and finally one day, he broke down and tasted mine. Guess what? He was converted!! This post is in honor of Scotty, my most difficult Reuben convert so far.

  • black bread/dark rye
  • thousand island dressing
  • swiss cheese slices (YES IT MUST BE SWISS!!!!!!!)
  • thin sliced, lean corned beef
  • saurkraut

Warm the saurkraut in the microwave to keep it from chilling your sandwich. Butter each slice of bread on one side ala grilled cheese sandwiches. On the other side of each slice spread 1000 island. Place a slice of swiss cheese, a heaping of corned beef and then a layer of saurkraut. Close the sandwich and grill, again ala grilled cheese. Don't worry about the cheese oozing out. Crispy swiss bits are the best part. Serve with a kosher dill and some chips and you're in smoked meat heaven.
