Russian Meatballs

  • 700 grams ground beef, pork, turkey, or chicken
  • 1 egg
  • 1 tbsp worchestershire
  • 1 small yellow onion grated
  • finely chopped chives, parsley etc
  • 1/2 cup bread crumbs
  • 1 sm bottle (250 ml) Russian salad dressing
  • 2 tbsp honey
  • 1/3 pkg dry onion soup mix

Mix together the ground meat, egg, wochestershire sauce, onion and herbs with your hands. Add breadcrumbs until a good meatball consistency is acheived. Form into large meatballs (approx 2" in diameter).

Bring a large pot of water to a boil and drop in the meatballs. Boil for approx 5 minutes. Up until this point can be done ahead and the meatballs can be stored in the fridge for up to 24 hours. ***

In a saucepan combine the Russian dressing, honey and onion soup mixture. Add the meatballs and simmer for approx 15 - 20 minutes or until they are cooked through. Add water if the sauce becomes too thick. I usually put on a pot of rice at the same time and then check the meatballs when the rice is done.

Serve with rice (the extra sauce is yummy on top) and some cooked greens. Sweet!!

*** you can use premade store bought meatballs if you want something super quick. Try and find the most plain flavoured meatballs you can and adjust the cooking time as they will most likely be cooked through already and much smaller.
