Carb Free Mashed Potatoes (Mashed Cauliflower)

Before I get emails telling me there is no replacement for mashed potatoes I will say I agree. BUT! I promise these are delicious and yummy and satisfying. Add the fact that they are a snap to make and who can complain? This recipe is enough for 2 hearty helpings.

  • 3 cups cauliflower florets
  • 1.5 tbsp butter
  • 1.5 tbsp sour cream
  • 1/4 tsp garlic powder
  • salt
  • fresh cracked pepper

Microwave or steam the cauliflower until it is tender enough to mash. In your mixer or with a hand blender combine all ingredients and mash away until smooth and delicious. Enjoy in any way you normally use mashed potatoes - with gravy, plain, on top of shephards pie...
