Cheater's Butter Chicken

Butter chicken is pretty much everyone's favourite dish at those fabulous Indian buffets. The problem with making it at home is that the authentic recipe uses hard to find or impossible to find spices, simmers all day and dirties a ton of dishes. This cheater recipe uses everyday ingredients, takes a reasonable amount of time and is actually healthier than the original. Do I think it can replace your favourite Indian restaurant? No. Is it still absolutely delicious and delectable? YES!

  • 2 tbsp butter or margarine
  • 1 small onion, chopped
  • 1/4 tsp cinammon
  • 2 tsp fresh garlic
  • 2 tsp ginger, grated
  • 3 tsp curry
  • 1 tsp cayenne
  • 2 chicken breasts, poached, cubed
  • 1 cup chopped canned tomatoes with juice
  • 1/2 cup sour cream

Poach the chicken ahead of time. To poach chicken I add it to a non stick frying pan with a few inches of water, seasoning salt and celery salt. Leave on a low simmer until the chicken is cooked through. Drain and refidgerate until needed.

Melt the butter in a frying pan. Add the onion and cinammon and sautee until the onion is soft. Add the garlic and ginger and stir until you can smell the garlic. Add curry and cayenne powder. Add chicken and toss until all surfaces of the chicken are coated.

Pour in the tomato with juice and allow to simmer 5 - 10 minutes so the chicken is heated through. Stir in sour cream until sauce is creamy and serve over rice. YUMMMMMMMMM
