Real Man's Chili

Chili is the perfect way to get a man to start cooking. If he can make KD he can make chili AND it's one of those macho meals that men don't seem to mind whipping up. This will make enough for two for dinner and lots leftover to freeze in individual servings. This is a basic simple "starter kit" for chili. It's great just like this but the thing cooks love is that you can improvise and add whatever you like. Make it hotter, sweeter, smokier etc. Be creative!

  • 1kg ground beef
  • 1 onion, choped
  • 2 tomatoes, chopped
  • 796 ml can of kidney beans
  • 796 ml can of pork and beans
  • 1 650 ml jar of salsa
  • 1 tbsp garlic powder
  • 2 cups water

In a nonstick frying pan brown the ground beef until there is no pink. While it is browning chop the onion and tomatoes.

Pour the kidney beans in a strainer and rinse with water to clean. Dump the kidney beans in a large stock pot with the chopped tomatoes, chopped onion, the can of pork and beans, the jar of salsa, the garlic powder and the water.

Pour the ground beef through the same strainer you used for the kidney beans (saves dishes) in order to drain out all excess fat. Add into the stock pot with all other ingredients.

Stir until all ingredients are mixed well. Cook on LOW*** with a cover for one hour, stirring every so often. Then remove the cover and cook on LOW for 2 - 3 hours until desired thickness is acheived.

*** Low and slow is the key here guys. You cannot rush chili by bringing up the heat. You will burn the bottom of the pot and everything will still be runny. Allow yourself at least 4 hours to make this or make it the day before. It doesn't need much babysitting. Just check it every 30 minutes or so, give it a stir and make sure it is not drying out.
