Indoor BBQ Chicken

This doesn't really taste anything like chicken cooked on the grill but does make a delicious BBQ sauce. I like to serve it with rice so I can pour any extra sauce overtop of it. The BBQ sauce in this can be used with any other meat as well. It's a great one for ribs due to the high sugar content.

  • 1 cup ketchup
  • 2 tbsp worcestshire
  • 2 tbsp dijon mustard
  • 3 tbsp molasses
  • 2 tbsp corn syrup or maple syrup
  • 2 tbsp cider vinegar
  • 1 tsp cayenne
  • 4 chicken breasts

Move your oven rack to the middle position and preheat to 325F.

In a metal frying pan that is oven safe (not non stick) heat a small amount of vegetable oil. When it is piping hot add your chicken breasts and get a nice brown to them. Don't try to turn them too soon, they need to brown to start to lift up from the pan. Remove the chicken to the side and drain any leftover oil.

In a bowl whisk together the remaining ingredients and add them to the drained pan. Heat on med low temp until the sauce thickens considerably. It should completely coat the back of a spoon. Return the chicken to the pan. Spoon the sauce over the breasts to coat it. Pop it in the oven and set the timer for 15 minutes.

Turn the oven to the broiler and move the pan up to the upper rack. Broil for 5 minutes watching closely. Remove and let sit for 5 minutes. Cut the chicken in the thickest part to confirm that it is cooked through.
