Real Homemade Chicken Fingers

A long time ago a certain restaurant I used to work at made their chicken fingers from scratch and to order. They were the absolute best I have ever tasted. Unfortunately when everyone got all hysterical about raw eggs they changed to a frozen product. I still can't find a restaurant that makes them as well.   • 3 bonesless skinless chicken breasts
  • 2/3 cup fine bread crumbs
  • 2 eggs
  • 1 T seasoning salt
  • oil for frying
  • your favourite dipping sauce

Preheat your deep fryer to 160C.

Slice the chicken breasts into long strips and then pat completely dry with paper towel. In a small bowl crack the eggs and beat them. In a larger bowl mix the bread crumbs and the seasining salt.

One by one coat the strips. With your right hand dip the chicken strip in the egg. With the same hand drop it inot the bread crumbs. Now with your left hand coat the chicken strip with the bread crumbs. Repeat until all are coated. Drop the chicken strips in the fryer 3 at a time only! Fry for 3 minutes. Remove and drain.

Split open the largest chicken finger to ensure it is fully cooked through. Enjoy with your favourite dipping sauce. If you are a Winnipeg-er I know this means Honey Dill :)
