Chocolate Caramel Shortbread

Absolutely decadent. Basically pure sugar. And of course... totally simple. I got this recipe from Rye's mom. I fell in love with first bite. It only uses half a can of condensed milk. I have no used for the other half so I make it double and freeze it or give it away.

  • 1 cup flour
  • 1/4 cup white sugar
  • 1/2 cup butter

Mix together until crumbly. Press into a 9x9 pan and bake at 325F for 20 minutes.

  • 1/2 cup butter
  • 2 tbsp corn syrup
  • 1/2 cup brown sugar
  • 1/2 cup sweetened condensed milk

Place remaining ingredients in a saucepan and melt together. Stir and heat continuously until boiling. Reduce heat and boil gently for 5 minutes. Pour over shortbread base and allow to spread evenly. Chill until caramel is set.

In a double boiler melt 200gm of milk chocolate. Pour over caramel layer and allow the entire slice to cool and harden before cutting.

Score the chocolate with you knife before cutting to avoid cracks.
