Easy Icing

I have tried many recipes and different styles of frostings and icings but this one is always my favourite. It uses ingredients on hand, it's dead easy and it tastes great. You can add food colouring to it or a dash of mint or other extract to change the flavour. Feel free to experiment, it's very forgiving. This makes enough for 12 cupcakes or a single layer cake.

  • 1/4 cup butter or margarine
  • 2 cups icing sugar*
  • 1/2 tsp vanilla
  • 3 tbsp milk

Beat the butter until it is soft. Add 1 cup of the icing sugar, the vanilla and 2 tsbps milk. Mix until smooth and incorporated. Add the 2nd cup of icing sugar and the 3rd tbsp of milk. Mix again until smooth and creamy. If you like it thinner add a touch more milk.

* If you are in a jam and don't have icing sugar you can make it in your food processor. Add regular sugar and pulse until basically the sugar is pulverized. It will make your icing a little more grainy but it'll do.
