Mexican Pizza

Pizza is great to make at home because you can control the ingredients and also have a chance to experiment. Save the pepperoni for when you order in. Go nuts when you make it at home. If you really get creative it can turn out quite fancy by adding more gourmet ingredients: shrimp,imported cheeses, marinated olives and a bottle of wine on the side. Try an ethnic variation like Indian with curry sauce or in this case Mexican.

  • flatbread (available with the pitas in most grocery stores)
  • salsa
  • chilorio (or ground beef/pork + taco mix)
  • cilantro
  • canned corn niblets
  • canned black beans
  • purple onion
  • jalepenos
  • mozzarella cheese
  • cheddar cheese
  • sour cream

In a small frying pan warm the chilorio until heated through and the fat has melted out. Chilorio is a spiced shredded pork available in Mexican grocery stores. It comes in a tuna can. If you can't find it used ground beef or pork and season with taco mix.

Top the flatbread with salsa instead of pizza sauce. Spread the chilorio or seasoned meat over each pizza. Next spread out a small amount of corn and black beans (make sure you rinse the black beans first). Top with finely chopped cilantro, sliced purple onion and chopped jalepenos to taste. Cover with both cheeses and bake at 350F for approx 13 minutes or until the toppings are bubbling.

Cut into pieces and add a small dollop of sour cream to each piece (this is especially helpful if you have used spicy salsa and had a heavy hand with the jalepenos)

*** If I have black beans and corn left over from this recipe I make Tex Mex Salad the next day to use them up.
