Ratatouille

This is an easy and delicious and healthy side dish. You can let it simmer away while you prep the rest of your dinner or lunch.

  • 1 yellow onion, sliced
  • 3 cloves garlic, minced
  • 1 Tbsp olive oil
  • 2 cans (398 ml) of diced tomatoes
  • 3 small zucchini, sliced
  • 2 Tbsp dried oregano
  • salt
  • pepper
  • 2 tbsp grated Parmesan

Saute the sliced onion and minced garlic lightly in olive oil until onions begin to turn clear. Add in the canned tomato and oregano. Simmer for about 10 minutes. Add in the chopped zucchini and simmer for another 10 minutes or until the zucchini is tender. Add Parmesan and stir until it starts to melt. Salt and pepper to taste. Yummy veggies!
