Ratatouille
This is an easy and delicious and healthy side dish. You can let it simmer away while you prep the rest of your dinner or lunch.
Chop onion and garlic. Saute lightly in olive oil. Add zucchini and chopped tomato. Add salt and pepper to taste (I like a LOT of fresh pepper). Add cilantro and allow to simmer slowly while you make dinner or for approx 20 mins. Add Parmesan and stir. Yummy veggies! |
