Ratatouille

This is an easy and delicious and healthy side dish. You can let it simmer away while you prep the rest of your dinner or lunch.

  • 1/2 purple onion
  • 2 cloves garlic
  • olive oil
  • 3 tomatoes
  • 2 small zucchini
  • cilantro
  • salt
  • pepper
  • 2 tbsp grated Parmesan

Chop onion and garlic. Saute lightly in olive oil. Add zucchini and chopped tomato. Add salt and pepper to taste (I like a LOT of fresh pepper). Add cilantro and allow to simmer slowly while you make dinner or for approx 20 mins. Add Parmesan and stir. Yummy veggies!
