Salmon Cakes


Try this recipe with Fish Sauce.

This is the PERFECT way to make use of leftover salmon. Salmon has such a strong flavour that sometimes I don't feel like it the next night, and yet it needs to be eaten right away. This is a great way to make it into something completely different.

  • 2-3 cups fresh bread crumbs
  • 3 eggs
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onion
  • 2 tbsp chopped fresh dill
  • 2 tbsp lemon juice
  • fresh pepper
  • oil

Start with 2 cups of bread crumbs and add more if necessary. Fresh bread crumbs are super easy to make in a mini chopper or food processor, just pulse until pulverized. Combine in a bowl with the eggs, parsley, onion, dill, lemon juice, and pepper. Add the salmon and mix with your hands breaking it up into small bits. If it is too wet add some more bread crumbs. Form into 1 inch patties. Dip in the remainder of bread crumbs and fry in the oil. Serve with lemon wedges.
