Mom's Apple Crisp


I have had many an apple crisp in my day but my mom's is still the best I have ever tasted. Pictured here I made it with the crab apples a coworker gave me from her tree. They have a high water content so you can see that it was a little runny. Don't be fooled it was still delicious. My favourite apples to use are Granny Smith. Best warm with vanilla ice cream.

For the filling:

  • 8 granny smith apples
  • 2/3 cup white sugar
  • 4 Tbsp flour
  • 1 tsp cinnamon
  • 2 Tbsp butter or margarine
  • 4 Tbsp lemon juice
  • fresh pepper
  • oil

For the topping:

  • 2 cups brown sugar
  • 2 cups rolled oats
  • 1 cup butter or margarine

Peel and core the apples and then slice into wedges. I make mine fairly thick because I like the apples to stay a bit firm. In a large bowl all of the filling ingredients and mix together. Pour into an oven proof baking dish.

In a large bowl (you can use the dirty bowl you just made the filling in) combine all of the topping ingredients until you have a crumbly mixture. Pour this over the apples and spread it out evenly. Bake at 325F until the apples are tender but not mushy.
