Diner Burgers

I love burgers on the grill. However, some folks don't own a BBQ and those of us who do spend a good portion of the year under a blanket of snow. Don't despair - you can still have delicious yummy burgers diner style!

  • extra lean ground beef
  • bread crumbs
  • egg
  • fresh cracked pepper
  • seasoning salt

Place the ground beef in a large mixing bowl. Lightly cover the entire surface with a sprinkling of bread crumbs. Shake seasoning salt over the surface as well. Add one egg. Crack a LOT of fresh pepper into the bowl. Fresh pepper is the most important part of a diner burger in my opinion. Mix together with your hands. Depending on the amount of beef you are using you may need to add bread crumbs or another egg. Don't make the mixture too sloppy. It should be mostly beef but stil stick together. Form patties that are approx 4 inches wide and 1 inch thick.

Preheat a non stick frying pan to medium heat and add a small amount of oil. It is better to cook burgers longer over a lower heat rather than on high heat which turns the edges black and dries them out. Add the patties and try to resist flipping. The best burgers are only flipped once no matter what your method. Cook until the juice runs clear. Set aside on a plate and allow to cool for at least 5 minutes to let the juices settle.

Reminiscent of several late night burger runs.
