Something Parmesan![]() We all know about Chicken Parmesan and the veggie option, Eggplant Parmesan. My personal favourite is Pork Chops Parmesan. Meat can be expensive, chicken gets boring, eggplant isn't always in season. Pork Chops are cheap, readily available in even the teeniest grocery stores and if you prepare them right they're delicious. No more chops in cream of mushroom soup - this is a million times better than mom's old recipe. (Use the same basic preparation for chicken or eggplant slices)
In a small bowl mix bread crumbs and Parmesan cheese in a 1:2 ratio making enough to cover your meat on both sides. Dip the pork chops in the crumb mixture covering well. In a metal skillet (do not use nonstick - it will not brown your meat properly) heat oil to medium high. Add your pork chops and brown them on both sides. It's okay if you get brown bits on the pan, after you add the sauce everything will come up and your pan will be fine. After both sides are browned add enough tomato sauce to cover the pan. It will probably sizzle and bubble if it's too thick so add some water to thin it out. Allow to gently boil for approx 10 minutes. After that time check the thickest piece of pork to ensure it's cooked through. In pizza style restaurants this is the point where they will top it with gobs of melted cheese but honestly I don't think you need it. The flavour is there and why add the fat? Parmesan-ey!!!
