Banana Bread

Banana bread is the best way to make use of over ripe bananas that would otherwise be headed for the trash bin. Some recipes are more... banana-ey but I never have 6 black bananas on hand. This is a simple, quick recipe that makes a small loaf, perfect for a delicious snack or breakfast treat.

  • 3/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup white sugar
  • 1 egg, beaten
  • 2 tablespoons melted margarine
  • 2 bananas

Preheat oven to 350F. Combine dry ingredients in a bowl and mix. In a small bowl mash bananas. Add egg to bananas and beat. Stir melted butter(not too hot or it will cook the egg). Combine wet and dry to form a batter. Pour into a greased loaf pan. Cook for 1 hour. The loaf will rise and crack but that's okay. Banana bread takes a long time to bake. Insert a knife into the centre to make sure it is cooked through. The added bonus is the DELICIOUS smell in your kicthen.
