Thai Peanut Chicken

This is my absolute favourite recipe for peanut sauce. It makes quite a bit but that is on purpose because I love, love, love it. Usually I make chicken skewers and rice as pictured and then put the sauce on everything. On the chicken, on the rice, on the veggies. It's delicious tossed with pasta and it's even good drizzled over salad. Very addictive.

  • 1/2 cup chopped yellow or white onion
  • 2 cloves chopped garlic
  • 1 tbsp olive oil
  • 2 cups water
  • 1 cup smooth peanut butter
  • 1/4 cup natural soya sauce
  • 1/4 cup sugar

In a nonstick frying pan sautee the onion and garlic in the olive oil until lightly browned. Add the water, peanut butter, soya sauce and sugar. It's going to look totally weird and like it will never come together but have faith.

Using a whisk gently stir the mixture over medium heat until the peanut butter starts to melt and mix in with the other ingredients. Let it come up to a bubbling simmer which will cause it to thicken. Once it is smooth and thickened you're done!

I could take a bath in this stuff!
