EXTREME Chocolate Chip Cookies

Rye and I read an article about how EXTREME was the buzz word of the 90s. Since then we laugh out loud when we see it in reference to silly things; extreme nachos, extreme razor blades, extreme car wash etc. These cookies are huge, tasty and loaded with chocolate chips (would you like some cookie with your chocolate?) so I think extreme applies here ;)

  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 3/4 cup margarine
  • 1 cup white sugar
  • 2 tbsp molasses
  • 1 tbsp vanilla
  • 1 egg
  • 1 egg yolk
  • 2 cups chocolate chips*

Preheat your oven to 325F. In a small bowl combine dry ingredients and stir. In a separate bowl cream the margarine, sugar and molasses together. Mix in the egg, egg yolk and vanilla until creamy. Mix in the dry ingredients until blended - do not over mix. Stir in the chocolate chips by hand with a spoon. Use a 1/4 cup measuring cup to measure out dough and place on a greased cookie sheet 2 inches apart. Do not flatten. Bake at 325F for 15 minutes. Allow to cool before eating. MMMMMM cookies - the fastest way to someone's heart.

* chocolate is one of those ingredients you CANNOT cheap out on, even in the case of chocolate chips. I highly recommend President's Choice "The Decadent" chocolate chips. So friggin good.
