Social Biscuit Slice

This is a quick and gooey and easy recipe. No baking required - just use the stove top.

Base

  • 2 eggs
  • 1 cup white sugar
  • 1/2 cup margarine
  • 50 social tea biscuits
  • 1/2 cup marashino cherries, chopped
  • 2 cups mini marshmallows

In a large pot (think about making rice crispie treats) add eggs, sugar and margarine and melt together. Simmer on low heat for 15 minutes (don't cook the egg!). Set aside to cool.

Crush tea biscuits into coarse crumbs(I do this in a freezer bag). Add chopped cherries and marshmallows to the bag and mix together.

Pour the biscuit, cherry, marshmallow mixture into the butter mixture in the large pot and stir together until everything is coated. Press into 8x8 pan and chill.

Topping

  • 1/2 block cream cheese
  • 1/2 cup margarine
  • 1 cup icing sugar
  • vanilla

Whip cream cheese and margarine together. Incorporate sugar and vanilla. Spread on the chilled 8x8 pan mixture. Refridgerate and slice when cold.
