Chocolate PavlovaThe national dessert of Australia! This chocolate version is from Nigella Lawson. It's a delicious version of the original.
Separate the egg whites from the yolk using the egg shell. Note: when I am baking I crack each egg into a small bowl or cup, check to make sure it is fresh then dump it in the mixing bowl. There's nothing more frustrating that ruining an entire batch of something with one sketchy egg. Beat until satiny smooth. Spoon in the sugar and continue to beat until marshmallow like. Pour in vinegar, cocoa and chips. Fold until incorporated. Pour in a mound on a piece of wax paper on a cookie sheet. Put into a preheated 350F oven and immediately turn down to 300F. Bake for 1 hour 15 minutes. While baking Whip cream with 2 tsps sugar. After pavlova has cooled and cracked top with the whipped cream. Enjoy :) |
