Potluck Pizza

This recipe is yummy, cheap, easy to prepare and travels well. Perfect for BBQs, wedding showers and potlucks.

  • 2 cans crescent rolls
  • 1.5 bricks cream cheese
  • sour cream
  • fresh dill, chives, parsley
  • salt, pepper
  • red, yellow pepper
  • broccoli
  • mushrooms
  • sharp cheddar cheese

Roll the crescent rolls out on a cookie tray as a full sheet - do not separate into triangles. You may have to cut the dough from the second can to fill in the gaps around the edge.

Bake according to package directions but keep an eye on it so it doesn't burn. When it is puffy and golden remove and cool. This is your "pizza crust"

Beat cream cheese with a little sour cream until it is spreadable. Add chopped dill, parsley, chives or any other fresh herbs you have until it is a tasty spread. You can also experiment with spices like curry. Salt and pepper to taste. If you're rushed you can use pre-flavoured cream cheese instead of making your own. Once the pastry has cooled spread the cream cheese over the top as your "pizza sauce"

Top with sliced peppers, mushrooms, broccoli florets, onion, mushrooms, salmon....whatever you feel like having on your "pizza". Remember, this will not be baked so everything must be edible raw or already cooked.

Cover the entire surface with the shredded cheese. The cheese will not get melted. Just cut the pizza as is and serve.
