Perogy Dough

This one is for for my friend Kim. When she moved to Winnipeg from Montreal she had never heard of a perogy. Let's just say that was very quickly remedied! Homemade are best but they are so time consuming. I only make them for people who really love me. That way I know it will pay off in the end.

  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 3/4 cup warm water
  • 2 tbsp oil
  • 1 well beaten egg

Mix water, oil and eggs. Sift flour and salt. In a large bowl add liquid to a flour well and mix well. Knead until smooth, at least 4 minutes. Let stand while making filling. This recipe can not be doubled, make multiple batches if you need more. One batch yeilds 4 dozen perogies.
