Tex Mex Salad
I think summer heat has something to do with eating fresh and crisp. Also all the skimpy clothing that doesn't hide ANYTHING is a motivating factor. In any case I crave salads like crazy when summer strikes and I had this SCRUMPTIOUS one the other day at a local restaurant.
Coat the chicken breast in Cajun seasoning (cayenne, paprika, nutmeg, garlic powder) and grill until blackened. In a large bowl add the greens. Top with feta, dates, corn and black beans. Arrange sliced avocado on top. Squeeze lime juice over the entire salad and drizzle with olive oil. Toss and then top with grilled chicken and a few cruched tortilla chips. I think this needs a lime margarita on the side too ;) *** If I have black beans and corn left over from this recipe I make Mexican Pizza the next day to use them up. |
