Tex Mex Salad
I think summer heat has something to do with eating fresh and crisp. Also all the skimpy clothing that doesn't hide ANYTHING is a motivating factor. In any case I crave salads like crazy when summer strikes and I had this SCRUMPTIOUS one the other day at a local restaurant.
Coat the chicken breast in Cajun seasoning (cayenne, paprika, nutmeg, garlic powder) and grill until blackened. In a large bowl add the greens. Top with feta, dates, corn and black beans, Arrange sliced avocado on top. Squeeze lime juice over the entire salad. Top with grilled chicken and a few cruched tortilla chips. I think this needs a lime margarita on the side too ;) *** If I have black beans and corn left over from this recipe I make Mexican Pizza the next day to use them up. |
