Orzo Salad
I made this up one day when I was trying to make a dinner out of what was on hand. Since then I have served it when catering and get asked for it at potlucks. It's so easy and simple but yummy and fresh at the same time.
Boil the orzo but keep a little firm. Cut the tomatoes in half, chop the cilantro and the green onion. Crumble the feta. Toss everything together and drizzle with olive oil. Squeeze the lemon over top. Sprinkle with kosher salt to taste. That's it! Easy-peasy. |
