Nana's Zucchini Pancakes

I was really missing my nana yesterday so I made these for dinner. They're so delicious and of course sinfully unhealthy. The combination of taste and a kitchen that smells so incredible is the best tribute I can give her.

  • 2 cups grated zucchini
  • 2 eggs
  • 1/4 cup chopped onion
  • 1/2 cup flour
  • 1/2 cup Parmesan, grated
  • 1/2 cup Swiss, grated
  • salt to taste
  • vegetable oil

In a medium bowl, combine the zucchini, eggs, onion, flour, Parmesan, Swiss, and salt. Mix with your hands to distribute ingredients evenly.

Heat a small amount of oil in a skillet. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden. Serve with sour cream.
