Horseradish Meatloaf

Meatloaf Beetloaf I HATE meatloaf. That is,I -did- hate meatloaf until I came across this extra yummy version. Use lean ground beef. Back in the day (and 30lbs ago) when I was seriously into cooking I would have said "use regular! fat is where the flavour is!" This is not a bad mantra for the few times a year you go to fabulous restaurant. But for everyday cooking...come on...just use lean. Your heart will thank you :)

Meatloaf

  • 2 lbs ground beef
  • 2 eggs beaten
  • 1 cup dry bread crumbs
  • 2/3 cup milk
  • 1/2 cup chopped onion
  • 3tsbp white horseradish
  • 1 tsp prepared mustard
  • 1 tsp salt
  • 1/4 tsp pepper

Sauce

  • 1/4 cup ketchup
  • 1/4 cup water
  • 1 tsp dry mustard
  • 1/2 cup brown sugar

Here is the secret to making everyone smile. Mix the meatloaf ingredients in a large bowl. Do not use a bread pan. Instead form the meat into a loaf (think rye or pumpernickel) and put it on a baking sheet. Cook in the oven for 1 hour at 350 basting now and then with the sauce. The result is that every piece has the yummy, crispy, sugar glazed outer edge. I go old fashioned and serve with mashed potatos and peas.
